MAKHANA





Makhana comes from the seeds of the lotus plant (Euryale ferox), which grows naturally in ponds and wetlands across Bihar, Eastern India, and parts of Nepal.
1. Harvesting:
◦ Farmers collect the prickly lotus fruits from ponds.
◦ Inside these fruits are black seeds with hard shells.
2. Processing:
◦ Seeds are sun-dried and roasted at high heat in clay stoves.
◦ When roasted, the hard shells crack and the white puff (the edible part) pops out.
3. Grading & Packaging:
◦ Seeds are sorted by size and quality.
◦ Finally, they are packed as raw makhana or roasted/flavored snacks.
